You know while you're making a dinner you haven't made before and realize, "Wait a minute...this might not turn out as good as I thought." But, you already bought all the ingredients and it's dinner time already, so you keep going.
I tried a recipe of a "different" Mac and Cheese (since that's about all I can eat right now.) It was basically ricotta cheese, with macaroni, chives, and then sprinkled cheese on top. Bake it for a few minutes just to melt the cheese. Disgusting right? I should have read the ingredients before I put it together. I wasn't really planning on making dinner, so I hadn't thought of what to put with it. So I whip out a can of baked beans and corn. Yes, that's quite the combination don't you think? No greens, of course. No! Actually I pulled out some lettuce for Dave that was probably 3 weeks old (since I can't really eat salads right now.) He said, "Isn't this kind of old?" So we had baked beans, corn, and macaroni noodles with a load of cheese. Yum :(
Then you're sitting at the table, eating a gross dinner and you see your husband picking at it with his fork (when he usually has it in a firm grip and is shoving food down so fast it's gone before you know it.) You say, "I know, it's not very good, sorry..." Of course he lies and says, "No it's great."
A few minutes later, he goes and gets a pudding out of the fridge. I just threw mine out and ate some left over mashed potatoes and pork (from my Mom's at Father's Day.) I hope tomorrow's dinner is a little more rewarding. If not, there's always an In N Out around the corner :)

you are so perfect, how did this happen! I bet it wasn't that bad. Ok, since you LOVE mac and cheese. Here's the recipe my mom always made us growing up. It was our favorite dish!
1. Cook pasta according to directions, the whole bag. And any kind of pasta, we liked the longer tubes.
2. In a large microwaveable bowl place half the cooked noodles inside, layer (a lot) of cheddar cheddar cheese on top. Place the rest of the noodles on top, and layer again with cheese. Salt and Pepper to taste over both layers.
3. Pour milk over the whole thing about ~ 3/4 way full.
4. Nuke in microwave until warm and all the cheese is melted.
5. STUFF FACE! oh it's good and SIMPLE!
Dave, honest, there will be light at the end of the tunnel in a month or two! You are such a "brave heart". Come over for dinner anytime.
Ha! This makes me laugh so hard - it was like you were describing my house. Tonight I made a diet recipe for enchilladas (since I'm still trying to slim down) and my family members - who are usually so hungry at dinner they'll eat most anything - HATED it! Nothing like spending time and energy cooking only to have most of it end up in the trash. ;-)
